Playing with Animals--no, I don't mean my kids, I mean real animals
So I have been super busy and out of the "blogging world" for a couple weeks. This is going to be super quick! I am taking a class and I have a TON of textbook reading that is eating up all my spare time (what little there was!) Anyways, the kids and I drove down to Phoenix last weekend to see my 3 siblings that live down there and their families. I took my camera but forgot to charge the battery! (I've mentioned before--I'm not the greatest remembering to take pictures--for one reason or another) So here are a few that my sister-in-law Sunnie took when we went to her friends house. This was more like a farm and my kids LOVED it.

Some Good Cookies (and not too bad for you either)
I guess there could be worse things in life than having "a sweet tooth." All right, FINE! So it's not just a sweet tooth, it's a big time addiction--what of it!? I was wanting some delicious cookies and so I made them. I usually just kind of make them up as I go along, depending on what sounds good, etc. For any of you who want to try making a great vegan cookie--here you go, this is what I put in them today: (BTW, "vegan" means there aren't any animal products at all. No eggs, dairy, etc.)
1/2 c. Earth Balance "butter" (a vegan butter substitute)
1 c. raw turbinado sugar
1 ripe banana
1 t. vanilla
1 c. whole spelt flour
3/4 c. whole oat flour
1/2 c. oat bran
1/2 c. flaxseed meal
1 c. oats
1 t. bak. soda
1 t. sea salt
organic dark chocolate chips
as usual, bake at 375 for about 8 min.
You can switch up the flours, use whole wheat, use soy flour, whatever you want.

3 Cheers for St. Pierre

So if you know me well you know that I am a huge UFC fan. Well, sat. night BJ Penn was dominated by St. Pierre. Seriously, St. Pierre just had his way with him. These are two of my favorite fighters. St. Pierre is so incredible to me because of his SICK work ethic--great fight! Anybody else out there enjoy this like I do? . . . . anyone. . . .
